Summer Wimbledon Punch

 

The classic Wimbledon Pimms is without a doubt the best of British in a glass. It is the summer wedding cocktail and with one mini sip you are beamed straight to the Centre Court or to the gathering outside the village church waiting for the bride and groom to come back from their photo session. What if you don’t drink alcohol? 

Here is the answer… This ginger fruit punch brings back all the same memories but without the hangover the next day.  

Serves 2

— 1 organic lemon
— ¼ cucumber
— Juice of 1 orange
— 2cm chunk of ginger
— 6 strawberries
— 4-6 mint leaves
— 500ml sparkling water 
— 4 tbsp maple syrup

  1. Cut the lemon into 10–12 wedges with the peel and place in a pitcher or large water jug. 

  2. Cut the cucumber and remove the inner seeds. I, I do this with an apple core utensil; it is quick, easy, and gives you a delicious snack to eat whilst you prepare the drink. Cut into 1cm chunky slices.

  3. Juice the orange and add to the jug. 

  4. Remove the ginger peel and then grate finely; this amount of ginger should give you 2 teaspoons of ginger. 

  5. Wash and slice the strawberries and add the mint and maple syrup and finally the sparkling water. 

  6. Take a long teaspoon and stir until the maple syrup has been distributed evenly.
